Ajvar is definitely the most famous Balkan product! A wonderful roasted pepper vegetable spread. Ajvar smells of chili pepper, tomato, aubergine  onion, garlic, oil, vinegar, salt and pepper. Ajvar has the aroma of grandmas kitchen in which vegetables where endlessly ground, chopped, pureed, and cooked. Nevertheless, not even one larder could do without it. Since it has been industrially prepared for us, roasted, mild and hot, our national vegetable sauce is not only served as an addition to meals but it enriches food in the stage of cooking or roasting and it is also a delicious bread spread. Ajvar or ayvar (IPA [‘ajvar]) is a relish made principally from red bell peppers, with eggplant, garlic and chili pepper. It is predominantly popular in the Balkans, chiefly in former Yugoslav republics. Depending on capsaicin content in bell peppers and the amount of added chili peppers, it can be sweet, piquant (the most common), or very hot. Ajvar can be consumed as a bread spread, an addition in sandwiches, a condiment (often used with grilled or roasted meat), or a salad.
