Ajvar is heerlijk als tapenade of als saus bij groentes of vlees. Twee tot drie simpele ingredïenten: Geroosterde puntpaprika's, olijfolie en soms nog aubergine.
Het wordt vaak thuis gemaakt. In open potten, op houtovens. Pure ingredienten & puur vakmanschap.
Malidzano is een smaakvolle Noord-Macedonische spread gemaakt met aubergines, groene paprika's en smaakstoffen zoals zout, peper en knoflook. Voor extra smaak worden vaak walnoten en verkruimelde witte kaas aan de spread toegevoegd. De naam malidzano is afgeleid van het Italiaanse woord melanzane, wat aubergine betekent.
De spread wordt traditioneel geserveerd als aperitief, gecombineerd met knapperig brood ernaast.
